Borscht


Ingredients:

* 4 lbs. beets, cubed
* 1 head garlic, chopped
* 2 lbs. beef marrow bones
* 3 lbs. potatoes, cubed
* juice of 1 lemon
* 1 1/2 cups sugar
* 2 tbsp. vegetable oil

Procedure

Put vegetable oil and beef marrow bones in 8qt. soup pot. On medium-high heat, brown bones. Add garlic and saute lightly. Add the rest of ingredients and cover with water to a 1/2 inch below the rim of pot. Turn heat down and simmer 1 hour. Add salt and pepper to taste, and add more sugar or lemon juice to taste.
